Made with organic and fairly traded beans from Kokoa Kamili, Tanzania.
Predominate tasting notes: The timing of the addition of sugar has a direct affect on the chocolate's overall finished flavor profile. I usually add sugar early on when working with Tanzanian beans. This causes the red berry flavors to become up-front and dominate. But in this batch, I experimented with adding the sugar much later in the process which resulted in lovely, chocolatey, marshmallowy flavors up front, followed by a red berry finish.
